Alvise Dal Mas arrived in London from Venice 12 years ago. After working in the dining room in this restaurant he decided to take it over and change its name to Salotto 31. He is the creator of the brand, the designer of the atmosphere and a real amphitryon for your evenings at Salotto 31.
Luigi, from Santa Maria di Leuca, arrived in London in 1977 after studying at the Hotel School of Sorrento. He worked in the West End but soon moved to the City, becoming a point of reference in the restaurant industry. He finally arrived as manager at Salotto 31 ten years before the current management which, upon taking over from the previous one, did not forget to call him back. Today many customers enter the door of Salotto 31 to greet their long-time friend Luigi.
Ariel, Argentinian but naturalized Italian after more than 20 years spent in the kitchens of the best restaurants in Bologna, later arrived at Salotto 31 as head chef after Covid and immediately left his mark on the restaurant’s gastronomy and menu: top quality products and traditional recipes.
The latest addition to the Salotto 31 staff, she gives the place the elegance and refinement of her way of serving customers, bringing an aura of femininity to the restaurant’s atmosphere.
